Flourless Chocolate Cake

A healthier version of everyone’s favourite – chocolate cake! This recipe contains no flour, and has low GI ingredients.

There is no compromising on taste however – this delicious chocolate cake will have everyone talking.

You Need:

250g dark chocolate, roughly chopped

2 tablespoons vegetable oil

2 tablespoons low fat milk

200g (2 cups) hazelnut meal

5 large eggs, separated

110g (½ cup) CSR Logicane™ Low GI cane sugar

Berries to serve

Method

Preheat oven to 180˚C conventional or 160˚C fan forced. Grease sides and line base of a 20cm spring-form pan.

Place chocolate, oil and milk in a heatproof bowl over a pan of simmering water. Do not let the base of bowl touch the boiling water. Stir with metal spoon until chocolate has melted. Set aside to cool slightly.

Combine melted chocolate, hazelnut meal, egg yolks and CSR Logicane™ Low GI cane sugar in a bowl and mix to combine.

Beat egg whites with an electric mixer, until stiff peaks form. Fold egg whites into chocolate mixture and spoon into prepared pan.

Bake for 45 minutes or until firm. Allow to cool in pan and enjoy with berries.
