A hearty vegetarian style meal cooked in just 5 minutes, jacket potatoes are always a hit.
PREPARATION: 10 minutes
COOKING TIME: 5 minutes
2 washed potatoes
2 teaspoons oil
125g can Edgell Red Kidney Beans, drained
1 small tomato, finely chopped
¼ cup grated reduced fat tasty cheese
¼ cup reduced fat sour cream
1. Brush potatoes with oil and prick the skins well with a skewer. Place onto a paper towel lined turntable in a microwave oven and cook on High for 5 minutes or until tender.
2. Make a 2cm cut across the potato and gently press to open slightly.
3. In a bowl combine drained Edgell Kidney Beans and tomato. Spoon onto potato and sprinkle with grated cheese. Serve with sour cream.
For a spicy flavour boost, top potato with a spoonful of Mexican salsa. To oven cook potatoes; place onto a baking tray and bake in a preheated oven at 200ºC for 50 minutes or until tender.
