A delicious dessert idea for something different, or to add to a banquet table, is always a fruit platter. A sweet and summery offering for those who prefer the healthier option. But to add a little of the ‘best of both worlds’ to your fruit platter how about doing a peach wedges in chocolate platter.
I know that I for one would certainly be up for that being as peaches are my favourite stonefruit and I can never get enough.
PEACH WEDGES DIPPED IN CHOCOLATE
6 large yellow peaches, stones removed and cut into thick wedges
200g white chocolate, melted
1/2 cup shredded coconut
200g dark chocolate, melted
60g pistachio kernels, roughly chopped
1. Dip half the peach wedges into melted white chocolate and gently press into the coconut.
2. Place onto a baking tray lined with baking paper.
3. Dip the remaining peach wedges into melted dark chocolate and gently press into the pistachios.
4. Place onto baking tray lined with baking paper.
5. Chill until set.
