Roast Chicken with Lemon and Thyme

Coles-Roast-Chicken

You Need:

1.5 kg You’ll Love Coles whole chicken
You’ll Love Coles butter
1 lemon cut in half
1 lemon thinly sliced
½ bunch Coles Fresh and Easy thyme
Sea salt
Extra fresh thyme for garnish

Instructions:

Place two lemon halves and a half a bunch of thyme, inside a You’ll Love Coles whole chicken. Bind the chicken’s legs with string.  Rub the chicken with butter and season with salt.

Roast in a moderate oven for approximately one hour.

Tip:

Cook chicken approximately for 40 minutes for every kilo.

Check to see if chicken is cooked by inserting a skewer under the drumstick joint.  Juice should run clear (not pink) when cooked.

Allow chicken to rest for 15 minutes before serving.
