Southern herbs and spices sound like just the thing to add a little extra zing to your summer celebrations so whip up this tasty salad from Ingham to create a new summer fave for all the family, young and old.
Tempting and tasty to encourage a tea break in the backyard cricket, water volleyball or any other fun activity your group of friends are running amok with.
Serves 4
You Need:
1 box Ingham Southern Ribbons
1 head Radicchio lettuce or purple witlof, washed and torn into bite size pieces
2 cups Garden peas, fresh and blanched or defrosted
200 g Fetta cheese, torn into cubes
¼ bunch Flat leaf parsley, chopped
2 tbsp Extra virgin olive oil
1 tbsp White balsamic vinegar
Salt and pepper to taste
Method:
Place the lettuce, peas, fetta and parsley in a bowl.
Drizzle with oil and vinegar, season with salt and pepper and toss gently.
Cook Ingham Southern Ribbons as per pack instructions and serve on top of salad.
