Turkey Drumsticks with Fennel, Tomato and Olives

There is no need to slave away in the kitchen for hours in preparation for your Christmas turkey dinner. Inghams have a range of turkey products that will keep even the fussiest mother in law impressed.

Serves 4

1 tablespoon olive oil
4 Ingham Turkey Drumsticks
1 red onion, halved lengthways, thinly sliced
4 baby fennel, thinly sliced
800g can diced tomatoes
½ cup chicken stock
½ cup white wine or water
1 cup pitted black Kalamatta olives
8 sprigs of lemon thyme
Salt and freshly ground black pepper
Crusty bread, to serve – optional

Heat oil in a large frying pan over medium heat. Add 2 Ingham Turkey Drumsticks and cook for 5 minutes or until browned on all sides. Transfer to a large roasting pan. Brown remaining drumsticks.

Add onion and fennel to pan. Cook for 4 minutes until softened. Add tomatoes, chicken stock, white wine and olives. Bring to the boil. Season with salt and pepper.

Pour vegetable mixture into roasting pan with drumsticks. Sprinkle lemon thyme sprigs over drumsticks. Cover roasting pan with foil and roast for 45 minutes. Remove cover and cook for a further 20 minutes or until turkey is cooked through. Serve with crusty bread.
