Recipe: Vegetarian Jacket Potatoes

A hearty vegetarian-style meal cooked in just 5 minutes, jacket potatoes are always a hit.

PREPARATION:

COOKING TIME: 5 minutes
SERVES: 2

Ingredients

  • 2 washed potatoes
  • 2 teaspoons oil
  • 125g can Edgell Red Kidney Beans, drained
  • 1 small tomato, finely chopped
  • ¼ cup grated reduced-fat tasty cheese
  • ¼ cup reduced-fat sour cream

Instructions:

1. Brush potatoes with oil and prick the skins well with a skewer. Place onto a paper towel-lined turntable in a microwave oven and cook on High for 5 minutes or until tender.

2. Make a 2cm cut across the potato and gently press to open slightly.

3. In a bowl combine drained Edgell Kidney Beans and tomato. Spoon onto potato and sprinkle with grated cheese. Serve with sour cream.

Expert Tip:

For a spicy flavour boost, top the potato with a spoonful of Mexican salsa.

If you prefer to oven cook your potatoes; place onto a baking tray and bake in a preheated oven at 200ºC for 50 minutes or until tender.
