This Strawberry Toffeed Brie is a versatile treat as it is both sweet and savory. The final result is delicious cheese coated with strawberry toffee and served with crackers – this could be used as an afternoon tea snack or after dinner delight.
Serves: 4
You Need:
- 250g double brie mini wheel cheese
- ½ cup caster sugar
- 2 tsp Queen strawberry essence
- 250g punnet small strawberries
- 350g red grapes, cut into small bunches
- Crackers, to serve
Method:
Put brie into the freezer for 15 minutes. Put sugar and strawberry essence into a small non stick saucepan over a medium low heat. Melt sugar, rolling pan often, until sugar dissolves and turns a rich golden colour. This will take approximately 10-15 minutes. Remove from heat and stand for 1 minute or until bubbles subside.
Put cold brie into the centre of a large serving plate. Pour strawberry toffee over cheese, drizzling down sides of cheese. Stand allowing toffee to set. Stand at room temperature for 1 hour or until toffee softens.
Arrange strawberries, grapes and crackers around toffeed cheese. Serve.
