Peaches are a delicious summer stonefruit that have been my favourite since childhood, and here’s is a different way to serve them, one I never would have thought of.
Peach Salsa
Serves 4
Ingredients
2 yellow peaches, stone removed, diced, skin on
2 Lebanese cucumbers, diced
1 large red capsicum, diced
Juice of 1 lime
1 tbsp fresh coriander, finely chopped
Method
1. Mix peaches, cucumber and capsicum together in a large bowl.
2. Squeeze the lime juice onto the salad and add coriander.
3. Serve with nectarine sliders

I normally do a Mango salsa but I would love to try the Peach Salsa recipe. It sounds delicious and could be accompanied by many dishes I make especially seafood.
