Dukkah is an Egyptian side dish containing herbs, spices and nuts. It is often served with bread or fresh vegetables as a dip and eaten as an appetizer. I am a recent convert to the joys of dukkah and can confirm that it is definitely more diverse than an appetizer with bread or vegetables. I use dukkah as a seasoning on many things and will definitely be seeing how many dishes I can enhance the flavour of with the Table of Plenty range of Dukkah’s.
Table of Plenty Dukkah’s are flavoursome and nutritious; they are free from preservatives, colours and flavours. For those with stricter dietary requirements you will be pleased to know that these are Gluten and Wheat free. And for the health conscious they are low GI with minimal carbohydrates.
The main source of nutritional value comes from nuts which have been shown to be an important part of a healthy balanced diet.
One of the Table of Plenty products is Pistachio Dukkah and here is a tasty dish utilising the flavour.
Spiced Lamb Rack with Table of Plenty Pistachio Dukkah
Preparation Time: 10min
Cooking Time: Approx 30min
Servings: 4

INGREDIENTS
2 x 8-cutlet racks of Australian lamb
2 free range eggs, lightly beaten
40g Table of Plenty Pistachio Dukkah
1tsp cayenne pepper
2 tbsp chopped continental parsley
200g asparagus, stalks trimmed and steamed
METHOD
1. Preheat oven to 200°C. Line a baking tray with greaseproof paper.
2. Combine chopped continental parsley and Table of Plenty Pistachio Dukkah in a bowl. Set aside. Lightly beat free range eggs in a separate bowl.
3. Dip lamb racks in egg mix and then coat in spiced parsley and Table of Plenty Pistachio Dukkah mix.
4. Cook in preheated oven for approx 25 minutes.
5.Place on serving platter with steamed asparagus.
