Recipe: Fresh Persimmon Cheese Plate

Weather conditions for perfect persimmons need to be warm and dry so this year the outlook has been bright. In line with the plentiful harvest growers expect consumption to continue to rise, helped along by ambassador Poh Ling Yeow.

Persimmons are an essential part of a healthy diet and are a good source of vitamin C and beta carotene, high in fibre and fat free. A sweet persimmon contains almost half the dietary requirement of an apple and higher levels of many minerals and antioxidants

Fresh Persimmon Cheese Plate

1 sweet persimmon
1 wedge aged cheddar
1 wedge blue cheese
4 shaved slices prosciutto
Biscuits, crackers or crusty bread to serve
cracked black pepper if desired

Cheese platter

Assemble the ingredients on a board or platter.

Top crackers or bread with cheese, prosciutto and persimmon slices.

Please note: The cheese selection can be varied to include soft cheeses such as brie or a white castello. Good depth of flavour in the cheeses is important to marry with the subtle sweetness of the persimmon.
