Macadamia nuts are extremely versatile and they slide right into many different recipes for a bit of variety. This Australia Day why not add a macadamia hummus to your nibble table and watch the crowd go wild.
Moreish macadamia hummus
Makes 1½ cups
Ingredients
½ cup macadamias, roasted
2 cups cooked chickpeas, drained
2 tablespoons macadamia oil
1 tablespoon lemon juice
3 tablespoons water
1 teaspoon minced garlic
10 medium basil leaves
salt and pepper, to taste
Method
Place all ingredients in a food processor and purée until smooth.
